Every customer has an account with a credit limit and an up-to-date balance. Put the sale on the tab from the same checkout, and record the payment when they come to settle. You see at a glance who is at the limit.

Deli and bread, by weight
Tap the product, type the grams on a big keypad and the system works out the amount from the price per kilo. It also goes the other way: type the amount and it tells you how much to weigh.
